Ingredients
1 medium sweet potato, peeled and diced
1/2 lb lean ground beef (90/10)
1/2 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1 tsp olive oil
1/2 cup low-fat cottage cheese
Optional toppings: sliced scallions, chili oil, sautéed spinach, red pepper flakes
Instructions
1. Preheat oven to 425°F. Toss diced sweet potatoes with olive oil, paprika, and salt.
2. Spread on a parchment-lined tray and roast for 25–30 minutes until tender and golden.
3. In a skillet, brown the ground beef over medium heat with garlic powder and black pepper for 8–10 minutes.
4. Layer roasted sweet potatoes in a bowl.
5. Top with cooked ground beef and a scoop of cottage cheese.
6. Garnish with optional toppings like scallions, chili oil, or greens.
7. Serve warm and enjoy.
Notes
Store beef and sweet potatoes separately from cottage cheese if prepping ahead.
Substitute beef with turkey or chicken for variety.
