Ingredients
1/2 lb lean ground beef (90/10 or 93/7)
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp smoked paprika
Salt and black pepper to taste
1/2 cup cottage cheese (low-fat or full-fat)
1 cup cooked rice, sweet potatoes, or greens
Optional toppings: chili crisp, scallions, avocado slices, sautéed mushrooms
Instructions
1. In a skillet, cook ground beef over medium heat. Break it up as it cooks.
2. Add garlic powder, onion powder, paprika, salt, and pepper. Cook until browned, about 8 minutes.
3. Warm your base (rice, sweet potatoes, or greens).
4. In a serving bowl, layer the warm base first.
5. Add cottage cheese to one side of the bowl.
6. Spoon seasoned ground beef over the top.
7. Garnish with optional toppings like chili crisp, scallions, or avocado.
8. Serve immediately and enjoy.
Notes
Swap rice for cauliflower rice or greens for a low-carb version.
Make it spicy with chili oil or sriracha.
Store beef and base separately from cottage cheese for meal prep freshness.
